The coffee is sorted by size and quality before being decaffeinated. This particular coffee was decaffeinated by using the Ethyl acetate or sugar cane process. Ethyl Acetate is a byproduct of sugar cane production which is isolated and used as a solvent to bond with and remove caffeine from green coffee. First, the coffee is sorted and steamed for 30 minutes under low pressure in order to open the coffee seeds' pores and prepare them for decaffeination. Then the green beans are soaked and washed in an ethyl acetate solution, which attracts and removes the caffeine. The coffee is then steamed, which removes the\u003cspan class=\"Apple-converted-space\"\u003e \u003c\/span\u003eEA. Juliano, originally trained as a civil engineer, chose to focus on the family business, bringing in innovation and sustainable practices. Otávio, having grown up immersed in coffee, naturally followed in his father’s footsteps. Together, they focus on improving cup quality while preserving the local fauna and flora, producing naturally processed coffees from a diverse mix of varieties including Mundo Novo, Yellow Catuaí, Bourbon, and Arara. After harvest, cherries were sold to Migoti Coffee, who processed it at their washing station in Migoti Hill. Here, cherries were sorted, left to ferment for one day, then pulped and washed.
